SQUID

(A Rhode Island staple that is much easier to cook than people think)

Sauté

  • Place 2 tablespoons of olive oil into a medium saucepan over medium heat

  • Salt and pepper the squid

  • When oil has heated, place squid tubes and tentacles into the pan

  • Saute tubes approximately 2 minutes per side - toss tentacles around in pan for same cooking duration. 

  • Add a splash of white wine and lemon juice, saute for another minute or two and serve. 

Grill

  • Set gas grill to medium heat - for charcoal grill, create an area with no coals to shift squid to if grill gets to hot

  • Coat squid in olive oil and sprinkle with salt, pepper and lemon zest (optional)

  • Place squid on grill, cook squid tubes for approximately 2 minutes per side, cook tentacles on grill (moving to cook all sides) for same amount of time

  • Squeeze lemon and serve immediately
