The most common, easiest and most delicious preparation method for scallops is to sear them. Place a tablespoon (or two) of butter in a cast iron pan over medium heat. After the pan is hot, place the scallops in the pan and sear for about two minutes. Then sear on the other side for another two minutes and serve. Scallops should be rare on the inside. This approach can be applied to the grill, directly on the grill (minus the butter).
